Thank you for taking the time to visit our humble home online! Happy Brew Kombucha is a passion project by myself, Gabriela. Upon returning to Manila from extensive overseas travel, I had fallen in love with the big kombucha trends in the United States, Europe, Australia, and New Zealand. However, to my despair, I noticed that the Philippines seemed a little behind.
Feeling left frustrated by being unable to get my hands on high-quality, unpasteurized kombucha in Manila, I set out on a mission to bring this “Elixir of Life” readily available throughout the Philippines. With this passion-project slowly coming to life, I was left stranded on how to turn my dreams into reality…
Luckily, I inherited an heirloom SCOBY (Symbiotic Culture Of Bacteria and Yeast which is essential to brewing quality kombucha) from my dad who resides in New Zealand.
Upon returning home to Mandaluyong, I started my very first brew in a 2.5-gallon glass jar and fell in love with this ancient process of fermenting tea.
A Love Affair with Kombucha Tea
Brewing kombucha has become part of my life that I have become extremely grateful for. Not only does kombucha help me and my family live a healthier lifestyle, but it has also opened up many doors for me and has created many new friendships.
Undoubtedly, I really love what I do and I am blessed that my partner Jerry supports my endeavors. He loves contributing many new and innovative ways to create delicious recipes, and we spend our time together carefully brewing our dreams into reality.
As he is Irish, he does spend a lot of time abroad traveling with work. Nonetheless, at every given opportunity, he dives deep into researching and sampling, inspiring me to hone my craft to make the perfect brew!

Finally, my dynamic team couldn’t be complete with my finest, and undoubtedly my cutest employee Uncle Fester.
Our fur-baby, a Maltese, is the glue to my business and brings us a lot of joy and happiness, 2 key elements that go into each and every brew!
